We present super high quality oil owing to the geographic location of Spanish state, the climate, the land and the water. The geographic location of the Azaraque olive grow son the border of the Autonomous Community of Castilla Ela Mancha, in the Albacete province. We use advanced cultivation techniques, frequently analyzing oil, water and leaves.

How to use it?
It is perfect for: Dishes that need flavoring such as salads and pasta. the perfect oil for your sauces, it will give a touch to your vegetable, marinated and will culminate your cold creams, like gazpachos, ajoblanco or salmorejos.

Sensorial Note: You will be able to perceive the olive juice of freshly cut grass and freshly picked tomato from the tomatera. On the palate, a sensation of sweetness predominates over bitterness, a very balanced spiciness.

Tasting Notes: On the nose, we perceive a fruity olive Picual of a bit more medium intensity, accompanied by aromas of ripe tomoto plant and fig tree. It is an essential base for a tasty rice dish.

Pairing: Optimal for fish entrees and boletus salads, baked fish, boiled and irons, delicate salads or rich in bitter flavors, sauces, pastries, cheeses and red meat.
Indicated for: Dishes that need flavouring such as salads and pasta. the perfect oil for your sauces, it will give a touch to your sandwiches. The peppery and picante notes complement the richness of cured hams and cheese.
Recomendation:

This variety of olive oil is especially recommended for a healthy balanced diet due to its high concentration of oleic acid and polyphenals. it´s smooth, peppery notes and hint of picante in the throat, differentiates it from the classic picuals.


Recipes:

We leave you this salad, ideal for these days when we are already noticing the heat. Simple, nutritious, although it may not seem like it, with very few calories and with a 100% Mediterranean flavor thanks to the smoking, the legumes and the aroma of green and fruity olives from the extra virgin picual olive.

Ingredients: Boiled chickpeas, Tomato for salad, Red pepper, Green pepper, Yellow pepper, Onion, Lettuce, Raisins, Dried blueberries, Smoked cod, Picual olive oil Camino de Anibal, Reduced balsamic vinegar, Lemon juice, Chives and parsley, Salt.

Preparation: We must start from boiled chickpeas, either by the traditional method, canned or thawed from the remains of a previous meal. We will cut the tomato and the pepper into small cubes, while the onion will be cut into a fine julienne. Place the previous ingredients in a large bowl, add the raisins and the previously rehydrated blueberries, (soak for at least two hours with water and a little sugar to pair with the smoked, this is optional) chopped chives and parsley. Now season with the lemon juice, Camino de Anibal Picual extra virgin olive oil and salt. Stir carefully and reserve in the refrigerator for at least an hour. We arrange a bed of washed lettuce leaves on the plate and place the rest of the seasoned ingredients on it, (if possible in a round stainless steel mold). Finally, we add the salad with a few slices of smoked cod and sprinkle with an additional thread of the oil used.
