We leave you this salad, ideal for these days when we are already noticing the heat. Simple, nutritious, although it may not seem like it, with very few calories and with a 100% Mediterranean flavor thanks to the smoking, the legumes and the aroma of green and fruity olives from the extra virgin picual olive.
Ingredients: Boiled chickpeas, Tomato for salad, Red pepper, Green pepper, Yellow pepper, Onion, Lettuce, Raisins, Dried blueberries, Smoked cod, Picual olive oil Camino de Anibal, Reduced balsamic vinegar, Lemon juice, Chives and parsley, Salt.
Preparation: We must start from boiled chickpeas, either by the traditional method, canned or thawed from the remains of a previous meal. We will cut the tomato and the pepper into small cubes, while the onion will be cut into a fine julienne. Place the previous ingredients in a large bowl, add the raisins and the previously rehydrated blueberries, (soak for at least two hours with water and a little sugar to pair with the smoked, this is optional) chopped chives and parsley. Now season with the lemon juice, Camino de Anibal Picual extra virgin olive oil and salt. Stir carefully and reserve in the refrigerator for at least an hour. We arrange a bed of washed lettuce leaves on the plate and place the rest of the seasoned ingredients on it, (if possible in a round stainless steel mold). Finally, we add the salad with a few slices of smoked cod and sprinkle with an additional thread of the oil used.
