Pu-Erh red tea : Post-fermented tea with a light earthy taste. Until recently, it was unknown in the western world. It is achieving great popularity because it has been proved to help weight loss and also to reduce cholesterol levels.
Red Tea or Pu-Erh tea is made using the leaves and shoots of the Camellia Sinensis plant, which is larger and grows in Yunnan Provincem China.
There are two kinds of Pu-Erh tea: raw and ripe. There is a difference in their production processes. The ripe variety was created to accelerate the tea fermentation process and, therefore, it does not have to wait for a minimum of 5 years until it can be sold.
It has a low tannin content and therefore helps to improve digestion problems. It goes perfectly with a diet which is low in fat and sugar, and rich in vitamins, mineral salts and carbohydrates. Its low theine content makes it suitable for any time of day, including afternoons and evenings.

How to use it?
First, boil the water. Then, add the boiling water to the tea bag, not the other way round.
Unless the water is at boiling point when it makes contact with the tea, the red tea will properly brew in short time. Make sure the cup or pot is nice and hot before you start. Leave the bag in the water for at least five minutes, In addition, for goodness sake, resist the temptation to dunk. Just leave the bag alone until the drink is ready!

Steps

Place the pu-erh tea cake or loose leaves in the teapot and add just enough boiling water to cover the leaves, then discard the water. Repeat this step once more, being sure to discard the water. This “rinse” helps ensure a high quality tea.

Fill the teapot with boiling water and allow the tea to steep for 2 minutes. Based on your taste preferences, you can steep for a longer or shorter period.
